Food risk analysis… do you use it?
Most of the time, when you are carrying out a hazard analysis relating to a process , a chemical substance or the presence of a pathogenic bacterium; you then assess the risks and conclude whether the danger is significant or not. You perform these steps using the tools of analysis of food hazards such as a pre-established list of hazards of processes or scientific data that allow you to justify your decisions to establish ways to manage the identified hazards.
Basic tools for food risk analysis
When performing a proper food risk analysis for a given substance or process or for the presence of a pathogen ; what tools do you use?
There is of course the scientific references, standards and/or cooking charts or tolerance levels of certain chemicals, etc .; but do you realize simulations and tests in practice?
In other words; risk analysis is not just done on paper . For example, for microorganisms , you can now use models and/or predictive systems based on mathematical algorithms. As a result of these simulations, it is important to carry out the test set tests under real conditions in order to validate it .
